San Diego Chopped Salad
The flavors of fall & the taste of San Diego in Chef Michael's chopped salad that is anything but ordinary!
Ingredients
- bell pepper
- heirloom tomatoe
- avocado
- corn
- cotija cheese or similar
Roasted Persimmon Vinaigrette
- 1 persimmon
- 3 Tbsp vinegar
- minced garlic
- 1/4 cup olive oil
- salt & pepper
Instructions
- Roast a persimmon till soft. Combine fruit, vinegar & minced garlic. Whisk n 1/4 cup olive oil, salt pepper.
