Apple Pomegranate Salad

Ingredients
  

  • Vinaigrette
  • 1 small shallot diced (or ½ red onion)
  • 1 tbsp honey
  • 1 tsp orange juice
  • 2 tbsp white wine vinegar
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup extra virgin olive oil
  • For the salad
  • 8 cups lettuce mix half lettuce and spring mix
  • 1 Apple cored and cut into 1/2" cubes
  • 1/2 cup pomegranate seeds put these on last
  • 1/3 cup pecans halves toasted (or other nut of choice)
  • 2 oz crumbled blue cheese optional

Instructions
 

  • In a small bowl combine the dressing ingredients and whisk until emulsified.
  • Add vinaigrette gradually to the lettuce and toss gently, until the lettuce is well coated. (You may use more or less to taste)
  • Top dressed lettuce with cheese (optional), pecans, apple and pomegranate seeds, adding pomegranate seeds last (to they are sure to be visible) and serve immediately.
