Roasted Brussels Sprouts & Spiced Apple Salad
Roasted brussels and spiced apple salad with cashew, gremolata, feta & pomegranate

- 1 lb Brussels sprouts
- 1 each Apple
- 1/4 tsp coriander
- 1/4 tsp cinnamon
- 4 oz Feta cheese
- 1 each Pomegranate
- 1 bunch Basil layer, roll leaves and slice
- 1 tbl Fresh Ginger grated or minced
Gremolata
- 1 cup Cashews
- 1/2 cup olive oil
- 1 each Lemon juiced and zested
- 1 bunch Cilantro
Rinse and cut brussels sprouts in half
Core and slice apples, then cut slices in half to make evenly sized pieces
Heat olive oil over medium high heat, then add brussels, cut side down. Cook 5 minutes.
Toss apples with coriander and cinnamon, add to pan and saute till they start to change color
While cooking, mix Gremolata ingredients together
When apples and Brussels are tender but still firm toss in basil and ginger for 1 more minute
Top with gremolata, feta cheese and pomegranate seeds.
Goes great with a grilled steak or blackened fish
