Miso Roasted Turnips
Roast turnips with a miso paste for a root veggie dish you will want to make again and again.

- 1 pounds Tokyo turnips rinsed well & halved
- turnip greens
- 3 Tbsp white miso paste
- 3 Tbsp olive oil divided
- coarse sea salt
- freshly ground black pepper
Heat oven to 425°. Line a baking sheet with parchment paper.
Whisk together 2 Tbsp of miso paste & 2 Tbsp olive oil in a bowl.
Spread the turnips on a baking sheet. Drizzle with the miso-olive oil mixture. Toss to coat well. Bake 12-15 minutes. Turn turnips halfway through. When done, cool. Sprinkle with black pepper & salt to taste.
Rinse leaves well & chop. Heat 1 Tbsp of olive oil in a pan. Sauté greens until lightly wilted. Stir in rest of the miso paste. Coat well. Add 1/4 tsp pepper.
Transfer the warm greens in a large salad bowl. Spread the roasted turnips on top of the greens.
